Every year our little pahadi apples come towards the end of summer and we make our apple cider vinegar with those beauties. This year, however, we have decided to try out a little something we used to have as kids, apple sauce or as the french call it, “compote de pomme”. A delicious addition to cakes, ice creams, well desserts in general. Even as is, some have been known to devour bowls. This version of ours has cinnamon and lemon in it. For flavour yes, but also the lemon has a very important and interesting job, it prevents the sugar we put with the apples (while cooking) from caramelising so you are able to get a lovely, thick saucy consistency.
